"Baking" is the act of signing and publishing blocks to the Tezos blockchain. Bakers are a crucial component of the PoS consensus mechanism by ensuring that all transactions in a block are correct, that the order of transactions is agreed upon, and that no double-spending has occurred.
Bakers validate all transactions and add them to the blockchain and get rewarded with additional XTZ in that process.
Building a "baking" node requires tech knowledge, specific hardware and security measures. By delegating your XTZ you free yourself from the need of running the node on your own while having full control of your XTZ's.
Yes, your XTZs remains on your wallet and under your control. Nevertheless, you need to keep your private keys safe as usual in the crypto.

Payment of Delegators rewards as from Cycle 60 to Cycle 64 are being processed.
In order to compensate for the disruption actual Delegators shall be rewarded with full rewards – no fee – from Cycle 70 to Cycle 80.

Finally, those Delegators which left StakeBake in between Cycles 66 and 70 shall be full rewarded – no fee – in the first 5 Cycles after re-entry. Previos fees shall remain applicable for Pioneer Delegators (delegation made on or before Nov 1st. 2018 with >10,000 XTZ).
